2cupschopped or shredded chickenrotisserie or leftover chicken works well
¼cupslivered almondstoasted
½cupdried cranberries
2stalks celery chopped
⅓cupmayonnaise
salt and pepper to taste
Instructions
In a large bowl combine all ingredients, mixing well.
Spoon generously onto toasted bread, bagels, or even lettuce.
Notes
Use boneless skinless chicken breast (3 medium-sized). Or use the meat from a rotisserie chicken. Leftovers will keep in the refrigerator for 5 days or in the freezer for 1 month.
