1tablespoonbutter
½cuponionchopped
1poundchicken breast bonelessskinless
1½cupschicken broth
8ouncesspaghetti noodlesbroken in half
1can cream of mushroom soup10 ¾ oz.
8ouncesmushroomssliced
½teaspoonground pepper or to taste
¾cupsour cream
1cupmozzarella cheeseshredded
½cupparmesan cheeseshredded
Instructions
Set Instant Pot to Sauté. Melt butter and then add onion to the pot. Cook for 2-3 minutes or just until onion is tender. Add the chicken and chicken broth, scraping up any browned bits from the bottom of the pot.
Set to cook on high pressure for 7 minutes. When the pressure cooker has finished, do a quick release.
Take chicken out of the pressure cooker, leaving the broth in the pot. Shred and then return to the pot. Add in pasta (broken in half), cream of mushroom soup, sliced mushrooms and pepper.
Set pressure cooker on high pressure for 6 minutes and do a quick release when it is finished.
Stir to break up any noodles that may be stuck together. Add in sour cream and both cheeses, mixing until well combined.
