1poundlean ground beef
1package taco seasoning
2cansRotel tomatoes10 oz each
4cupsbeef broth
15ouncecanned pinto beansor black beans, drained and rinsed
Instructions
In a medium saucepan, cook the ground beef over medium high heat breaking it up with a spoon until no pink remains. Drain fat.
Add the taco seasoning and stir to combine, cook for 1 minute.
Stir in the tomatoes, beef broth, and rinsed beans.
Simmer uncovered for 10 minutes, stirring occasionally.
Add toppings as desired.
Notes
Optional topping suggestions: Sour cream, shredded cheddar cheese, sliced green onion, avocado.Leftovers will keep in the refrigerator for up to 3 days and in the freezer for 6 weeks.
