I love loaded potatoes with my meal, so turning that concept into a cold salad that would be perfect for my next outdoor BBQ was the inspiration for this! As with all of my recipes, this recipe is super simple to follow. I have tried different store bought versions of Loaded Potato Salads, and they are mediocre, at best, and super expensive.  That got me experimenting with my Instant Pot!

I knew there just had to be a way to make it cheaper than the store’s version and way tastier!  You know where there’s a will, there’s a way!

So, the first thing I experimented with was with the different types of potatoes. I found that the baby heirloom potatoes gave me the desired taste that I was wanted and actually held up better in the salad. Now, the potatoes are a multi-step process, you’re first roasting them in the saute mode of the Instant Pot, then steaming them in the IP, and finishing them with cooling in the fridge. Trust me and don’t try to skip a step. The Instant Pot Roasted Loaded Baked Potato Salad will not turn out right if you do.

Once they are chilled, pick the perfect size cut for your family, diced or cubed, quartered, whatever you want! I like to leave my in bigger pieces honesty because my little guy doesn’t like this much anyway, so I don’t really have to make it kid friendly. He’s just not much of a potato fan at all, if you can believe that!

After you cut up your potatoes, it’s time put this all together! I chose to put 12 oz. of bacon for the recipe, but if you have Bacon-holics in your household, like I do, then you can always add more.  I mean, you can’t go wrong with bacon!  Am I right?  Also, I have that mayonnaise is optional, but I truly prefer that little bit of smoothness in the flavor!

Once you have the ingredients all mixed up, you can serve right away.  However, I personally like to let it chill for at least an hour to have the flavors enhance with each other before serving!

Add oil to your Instant Pot and turn on to saute. Add in the potatoes and roast them for 6-8 minutes, stirring on and off to ensure all the potatoes are lightly roasted. Turn Instant Pot off.

Remove potatoes and place them in a steamer basket. Add 1 cup of water to the Instant Pot inner pot and then place the steamer basket with the potatoes in the pot.

Close the lid on the Instant Pot and turn the valve to sealing position.

Turn Instant Pot on to manual high pressure (the pressure cook button for newer models), for 7 minutes. When timer is up, quick release the pressure.

Transfer potatoes to the refrigerator to cool quickly. When they are cool to the touch, half and quarter the potatoes depending on the size of the potato.

In a large bowl, mix potatoes together with remaining ingredients. Season with salt and pepper and serve!

6 qt Instant Pot

Ingredients  

  • 3 pounds baby heirloom potatoes
  • 12 ounces bacon cooked and chopped
  • 2 tablespoons olive oil
  • ½ cup green onions chopped
  • 1 cup cheddar cheese shredded
  • 1 cup sour cream
  • ½ cup mayonnaise
  • salt and pepper to taste
  • 1 cup water for cooking in Instant Pot

Instructions
