One pan smoked sausage and potatoes is so easy for a weeknight meal!

  • 2 pounds potatoes chopped
  • 1 pound smoked sausage sliced
  • ½ large onion diced
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • ½ teaspoon garlic powder
  • 2 bell peppers
  • salt & pepper to taste


  • Preheat oven to 425°F. Line a large pan with foil and spray with cooking spray or line with parchment paper.
  • Toss potatoes, sausage, and onion with olive oil and seasonings, place on pan and bake for 15 minutes.
  • Chop peppers and toss with 1 teaspoon of olive oil.
  • Remove pan from oven and add peppers. Cook for an additional 30 minutes or until potatoes are fork tender. Stir sausage and veggies half way through cook time.
