These bowls are filled with beef, black beans and brown rice making them super hearty and filling without all the traditional calories of original burritos. And, by cooking everything in the Instant Pot, you will only need to dirty one dish!  But, before I even get lost in how awesome and easy these Instant Pot Beef and Brown Rice Burrito Bowls are, I want to let you know that these are not just traditional meat filled bowls. They incorporate a unique ingredient that makes them not only super tasty, but also so much healthier! Can you guess what it is? Mushrooms!

Who would have thought right?! Before taking the Blenditarian Pledge, I had no idea how good mushrooms really are for you. I mean, I ate them because I liked them, but I never thought they were really beneficial. I also had no idea how much there was to learn about mushrooms!

After doing a little reading on the Bleditarian website, I found that mushrooms are fat-free, cholesterol free, low in calories, and provide important nutrients like vitamin D, B vitamins, antioxidants and potassium! Mushrooms are also low in sodium and rich in umami (the “fifth” taste), which means enhanced flavor without the added salt. That’s when I knew I really needed to start incorporating them into more meals.

Now, when I say these Instant Pot Beef and Brown Rice Burrito Bowls are made with mushrooms, I don’t mean I just tossed them in. That would just never fly around here. I have a picky 5-year-old that would never touch them, and a husband who would just pick them out. I actually incorporated them into the meat by blending. Blending mushrooms with meat adds an easy serving of vegetables to the plate. It’s like hiding them in plain sight which is great if you have a houseful of picky eaters like I do. They won’t even taste the mushrooms to complain about them being in there!

Blending mushrooms to your meat is also a great way to save a buck! It adds volume, generating more servings and stretching recipes into more portions! When cooked properly, mushrooms can easily mimic meat. To get the best blend results, mushrooms should be chopped to match the consistency of the meat they’re paired with (like ground beef). I used a food processor to finely chop my mushrooms and then incorporated them into my ground beef by hand in this recipe. It worked out really well and the meat stayed together just like it would without the mushrooms being there.

After you have incorporated your mushrooms to your meat, you can cook it like you traditionally would. The mushrooms do add water to your meat, so you may need to drain it like I do in this recipe, but they also absorb flavors so well! If I didn’t tell you they were in these Instant Pot Beef and Brown Rice Burrito Bowls, you wouldn’t even know they were there!

Adding mushrooms to these Instant Pot Beef and Brown Rice Burrito Bowls really bring them to the next level. They help cut calories, cut cost, and increases flavor! Chop mushrooms super fine or blend in a food processor. In a larger bowl, combine ground beef and mushrooms and kneed until mixed well.

Turn Instant Pot onto saute and wait until it is hot to add meat. Cook meat until no longer pink then drain off excess fat and water. Turn Instant Pot off.

Return meat to pot then add brown rice and broth on top. Don’t stir.

Add taco seasoning to the top and use a spoon to lightly move it around. Do not disturb the rice below.

Close Instant Pot and set to sealing position. Select manual high pressure (the manual button or the pressure cook button on the newer models) and set timer for 22 minutes. When timer is up allow for a full natural release (this takes about 12-15 minutes).

Give everything a good stir then move the rice mixture to the side. Add black beans to the empty space and close up the pot. Let it sit for 5 minutes to warm the beans. Do not set it for any cook setting because you will burn the rice and beans!

Once beans are warmed give everything another good stir and serve! Top with all of your favorite toppings.

Ingredients  

  • 1 lb lean ground beef
  • 8 oz button mushrooms
  • 2 pkgs Taco Seasoning
  • 1 cup brown rice
  • 2 cups beef broth
  • 14 oz can black beans drained

Optional Toppings

  • tomatoes
  • avocado
  • cilantro
  • sour cream
  • lime wedges
  • salsa
  • shredded cheese
  • tortilla strips
