Tomato Basil Pasta with Chicken is normally a meal that I make in the summertime (and have been for YEARS), but with all the ingredients still hanging around my local grocery store, I thought why not! I mean, it was world pasta day yesterday after all!

Instant Pot Tomato Basil Pasta with Chicken

This recipe is one I have always made on the stove top until now. I threw it together one day after my husband and I were both craving a lighter pasta and have been making it the same way ever since. One of the reasons I stopped making it so often was because it always made a ton of dishes. You need a pan for the chicken, a pot for the pasta, a pot for the pasta, and more. Plus, all that stuff never fit in the dishwasher in the same load!

Now, thanks to the Instant Pot, I can finally make Tomato Basil Pasta with Chicken again and it’s almost effortless. All you need to do is cut up some tomatoes, chop some basil, slice some chicken breast, and your practically done!

Instant Pot Tomato Basil Pasta with Chicken

This simple but delicious pasta is perfect for nights when you just don’t feel like cooking or maybe just don’t have the time! You can even customize this without effort! On a diet and don’t want to use cream? Don’t! The sauce will thicken up with out it as it sits. Don’t like basil and want to use spinach and mushrooms instead? Do it! Nothing dramatic happens I promise!

No matter what occasion you are cooking this for, be it a weeknight dinner, dinner party, a meal to bring to a neighbor, you are sure to impress!

Instant Pot Tomato Basil Pasta with Chicken

Turn Instant Pot onto saute and add butter. Wait for butter to melt and add garlic. Cook until fragrant (about 1 minute or so). Add chicken, salt, pepper, and continue to cook until the chicken turns white one the outside.

When chicken has a white exterior, add wine, lemon juice, and basil. Let cook for another minute or two.

Turn Instant Pot off and add your spaghetti noodles and both/stock. *When adding your noodles, try to layer them!* This will help prevent clumping. You may notice your noodles are not all the way in the broth and that’s OK. You can push them down a little bit with a spatula or spoon but do NOT mix them.

Close Instant Pot and cook on manual high pressure for 4 minutes. When timer is up, turn Instant Pot off and preform a quick release of pressure.

Turn Instant Pot back onto saute and add tomatoes and cream. Continue to cook while stirring consistently until cream mixture is boiling.

When mixture is boiling turn Instant Pot off and allow to sit for around 5 minutes. This will allow the sauce to thicken up.

6 qt Instant Pot

Ingredients  

  • 1.5 lb boneless skinless chicken tenderloins cut into bite sized pieces
  • 4 tbsp butter
  • 3 cloves garlic minced
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 medium tomatoes diced (about 2 cups)
  • ¼ cup freshly chopped basil
  • ¼ cup white wine
  • cup lemon juice
  • 16 oz thin spaghetti noodles broken in half or pot sized
  • 4 cups chicken broth or chicken stock
  • 8 oz heavy cream
