Ingredients and Variations

Beans – We like Hurst’s Hambeens, but Goya has a variety and so will many chain supermarkets. Assorted beans and lentils like pintos, navy beans, baby limas, garbanzos, split peas, red & white kidney, black beans, yellow split peas, and more are packaged with a seasoning packet that infuses the beans with savory flavor. Always rinse beans before using them to remove any dirt or debris.

Pork – Diced ham and bacon add meaty flavor to 15 bean Cajun soup, but this is a great recipe for repurposing leftover ham hocks (shank) or ham bones (leg). Other zesty pork options are smoked sausage, Polska kielbasa, or for an authentic Cajun meal, use Andouille sausage.

Seasoning – If you can’t find the 15 Bean blend with the Cajun seasoning packet, make your own and have plenty of extra for future recipes!

Variations – Add some spinach, kale, celery, carrots, or a frozen bag of mixed veggies to add more flavor, color, and texture to Cajun 15 bean soup. Add them in Step 3. For a vegetarian version, simply leave any meat-based ingredients out, but follow the rest of the recipe.

How to Make 15 Bean Soup in the Instant Pot

Cooler weather calls for comforting soups and stews and this 15 Bean Soup tops the list.

  1. Saute onion in oil in the Instant Pot for 5 minutes. Add garlic and saute one minute more.
  2. Deglaze the bottom of the Instant Pot with one cup of chicken broth. Add Cajun seasoning and parsley.
  3. Add remaining ingredients to the Instant Pot, seal, and cook (per recipe below). Natural release for 10 minutes and finish with a quick release.
  4. Stir soup before serving.

Leftover Soup?

To Store: Keep Instant Pot 15 bean Cajun soup in a covered container in the refrigerator for up to 4 days. Reheat on the stove.

To Freeze: Beans freeze beautifully! Once cooled, pour the soup into individual freezer bags or containers and freeze for up to 6 months.

To Reheat: Defrost 15 bean Cajun soup by reheating the soup in a saucepan over medium-low heat until heated through.

Equipment

6 qt Instant Pot

Ingredients  

  • 1 teaspoon vegetable oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried parsley
  • 20 ounce package 15-bean blend
  • 5 strips bacon cut into one-inch pieces
  • 8 ounces diced ham
  • 4 cups water
  • 4 cups chicken broth

Instructions 

  • Set the Instant Pot to saute mode and add vegetable oil. Add the onion and cook for 5 minutes, stirring occasionally. Add the minced garlic and saute for one minute.
  • Turn off the Instant Pot and add one cup of chicken broth. Deglaze the pot by scraping the bottom of the pan to remove stuck-on onion and garlic. Season with Cajun seasoning and parsley.
  • Add the beans, bacon, diced ham, water, and remaining chicken broth. Stir to combine.
  • Place the lid on the Instant Pot and seal the vent. Set the Instant Pot to pressure cook for 35 minutes.
  • When the cook time is up, allow the Instant Pot to naturally release for 10 minutes, then do a quick release to remove remaining pressure. Stir soup before serving.
  • Note: To thicken the soup, mash some of the beans using a potato masher. Stir to combine.

Notes

Leftovers will keep in the refrigerator for 4 days and in the freezer for 6 months.
