  • 2 cups chopped or shredded chicken rotisserie or leftover chicken works well
  • ½ cup dried cranberries
  • cup mayonnaise
  • ¼ cup slivered almonds toasted
  • 2 stalks celery chopped
  • salt and pepper to taste

Instructions 

  • In a large bowl combine all ingredients, mixing well.
  • Spoon generously onto toasted bread, bagels, or even lettuce.

Notes

Use boneless skinless chicken breast (3 medium-sized). Or use the meat from a rotisserie chicken.
