Blackbird (1)If your looking for a new spin on the old chicken salad, boy do I have a recipe for you! Not only is this gourmet chicken salad recipe super easy to make, it’s also amazingly cheap and can be made to include practically anything you want. Take that $11 you would spend in your local cafe for a similar sandwich and feed your entire family easily!

If you are looking for something else to add to this salad try adding apples if they are in season. I also like to use left over oven baked chicken. We are not big on left overs in my house so this is a great recipe for us to make sure to use what we have (and I dont have to hear complaints 😉 ).

What ever you do, DO NOT ADD TO MUCH MAYO! Even if your a big mayo fan start out with a small amount because you can always add more. You do not want this salad to be to thick.

Gourmet Chicken Salad

this recipe is a great recipe for an easy lunch, and also tastes great.

Ingredients  

  • 2 ½ - 3 cups cooked chicken breast cubed
  • ½ cup walnuts chopped
  • ½ cup cranberries
  • 2 stalks celery chopped
  • 2 tablespoon lemon juice
  • 4 tablespoon mayo
  • salt and pepper to taste

Instructions 

  • In a big mixing bowl combine all ingredients and stir thoroughly.
  • Spoon generously onto toasted bread, bagels, or even lettuce for a delicious lunch or dinner!

Notes

I like to use boneless skinless chicken breast (3 decent sized ones) for a more eye appealing salad but only had a rotisserie chicken on hand. You can use either with the same delicious result.
If you want to make a smaller amount start with a tiny amount of mayo and lemon juice, you can always add more gradually.
