Ingredients & Variations
Carrots – Regular whole carrots or bagged baby carrots work well in this recipe. Choose carrots roughly the same width so they cook evenly. Frozen sliced carrots can be used, and they don’t need to be thawed first which is great if you don’t have time to prep!
Glaze – Real butter adds the best flavor, but leftover bacon grease will add a smoky flavor to the carrots. Brown sugar can be replaced with honey or maple syrup. Feel free to experiment! It’s hard to go wrong with this easy recipe!
Variations – Cook other veggies like halved baby potatoes, diced sweet potatoes, diced parsnips, turnips, celery, chunks of cabbage, pearl onions, and broccoli or cauliflower florets.
How to Make Carrots in the Instant Pot
Instant Pot carrots are a healthy and delicious side dish that takes only minutes to make!
- Place prepared carrots in the Instant Pot with water and cook on HIGH pressure (per the recipe below).
- Perform a quick release and drain the carrots.
- Return the carrots to the Instant Pot and stir in butter and brown sugar until melted.
Season with salt and serve.
Tips & Tricks
- Garden fresh or young baby carrots take less time to cook while older or larger carrots might need more time. Test the carrots with a fork early to ensure they don’t overcook.
- For more of a brown sugar glaze, simmer the sauce ingredients on the stove until thickened before adding to the recipe in Step 4.
How to Store Leftovers
- Leftover Instant Pot carrots will last up to 5 days in the fridge in an airtight container. Freeze portions in zippered bags for up to 4 weeks.

- 1 ½ pounds carrots
- ½ cup water
- 2 tablespoons brown sugar
- 2 tablespoons butter
- ½ teaspoon salt
Instructions
- Peel the carrots and cut into ½-inch diagonal slices.
- Add the carrots and water to the instant pot. Seal the lid and cook on "MANUAL – HIGH PRESSURE" for 2 minutes.
- Quick release the pressure and drain the carrots.
- Add the carrots back into the instant pot and stir in brown sugar and butter until melted. Season with salt.
