Simple Easy Chili Recipe
- Every home cook needs a ‘foundation’ chili recipe that’s fast and easy to make for last-minute meals and crowd-pleasing potlucks!
- Versatile! This quick chili can be ready in 20 minutes or simmered low and slow for hours and the flavor will just get better.
- Customize chili by adding or removing whatever suits your palate or use up leftover veggies and cheese to save some budget dollars!
Ingredients & Variations
Beef – Ground beef, turkey, chicken, or pork can be used, or a combination of any. Use half the amount and add more beans for a less meaty chili.
Beans – Kidney beans are the best choice for chili because they stay firm, but you can use any canned beans as long as they are drained and rinsed first.
Base – A can of tomato soup and a can of Rotel (diced tomatoes with green chiles) give this recipe its thick and rich base. Add extra soup or tomatoes, or omit both, and use a large can of diced tomatoes with juice.
Toppings – Sour cream, salsa, diced onions, shredded cheese, sliced black olives, and jalapenos or green chiles.
How to Make Homemade Chili
- Cook ground beef with onions, bell pepper, and garlic (as per the recipe below).
- Add remaining ingredients, cover, and simmer until heated through.
Tips & Tricks
- Kick up the heat a little with some homemade chili powder or a few dashes of chili sauce.
- Sweeten chili by stirring in some brown sugar or maple syrup.
- For an extra thick chili (great for sloppy joes!), let it simmer on the stovetop until thickened as desired. Or mix 2 tablespoons of cold water with 2 tablespoons of cornstarch and stir it in.
- For a thinner, soup-like chili, simply add a little water or another can of tomato soup.
What to Serve with Chili
Chili needs something to scoop and dip and there are so many ideas for what to serve with chili! Homemade bread and a simple green salad with a side of crispy sweet potato fries is the perfect way to round out this meal.
